Description

The world's most recognisable hot pepper. 2 500–8 000 SHU, occasionally up to 30 000 SHU (TAM variety: 1 000 SHU). Fleshy, 5–9 cm fruits harvested green. When smoked and dried, becomes chipotle. Named after Xalapa (Jalapa), capital of Veracruz, Mexico. Annual global production exceeds 500 000 tonnes.

The TAM Mild Jalapeño, developed by Texas A&M, has < 100 SHU — virtually no heat. White veins inside the fruit contain the highest capsaicin concentration.
